This simple sandwich combines two of my favorite things to eat, fruit and cheese! I love discovering and trying out meatless sandwich ideas. Ever since I watched the 5 Biggest Risks for Women Over 40 episode of Dr. Oz with my mom, I've tried my best to steer clear of sandwich meats which he explained increase risks for all types of cancer. Sandwich meats are high in nitrates and nitrites which convert carinogens in our body and damage our DNA, hence increasing our chance of having cancerous cells.
Numerous studies and research everywhere shows the dramatic links between disease and meat, especially processed meats. Gross.
A friend of mine showed me this video: Fork over knives, which also discusses the links between sickness and meat. It scared the daylight out of me. I suggest watching it, it'll open your eyes a little.
Anyway, I picked up this amazing fig jam from a little french bakery, Petit Paris, for my stepdad as a stocking stuffer. We finally tried it out today. Toasted rye, thick brie slices, a thin spread of jam, and apple slices made for the perfect light but filling lunch.
